The Booking22 project examples requires the JavaSE-1.6 execution environment.  Configuring projects after importing causes WTP Java facet to change the classpath.
WTP Java facet will choose some JDK 6 that is in the workspace (JDK 6 update 21 in your case).
If you still think this is a bug, please open a new jira and I will try to check why this is happening.
