The list of archetypes isn't fetched from Maven central in real time. m2e uses a nexus index, which is supposed to be updated on each Eclipse start (check Window > preferences > maven > download repository index updates on startup)
You can also force an index update from the Maven Repository View (Window > Show view > Other > Maven Repositories). Right-click on Global Repositories > Central and choose Update index).
