Set an output directory in Preferences -> JBoss Tools -> Project Examples. Invoke wizard (the old one) for some example/JBoss quickstart and uncheck "Use default location" and set some different location to location defined in Preferences then project is created in location which was defined in Preferences. It should create the project in location which was defined in wizard.
