I think having a Jacoco plugin would be one of the best approaches. I could try to write this, but I am not a Jenkins expert...
IMHO, installing Sonar and using Sonar Jenkins plugin would be much easier, and would also give for free static analysis reports (Findbugs, checkstyle...).
