Burr, I tried again to reproduce your weirdness, but failed to do so.

The difference on my end is that in my case "/Library/Internet Plug-Ins/JavaAppletPlugin.plugin/Contents/Home/bin/java" is Java 7, not Java 6. Why haven't you upgraded your system java to java 7 yet anyway? Apple has disabled the Java plugin in Safari for everybody who still has Java 6. I believe OS X should have offered you the upgrade long time ago.

But anyway, I am still unable to make the server fail to start.

I was using JBDS 7.0.0.Alpha1 B124, EAP 6.1.0.ER3, "/Library/Internet Plug-Ins/JavaAppletPlugin.plugin/Contents/Home/bin/java" for JBDS installation: java version "1.7.0_17".
And then I added the EAP server using the default Java 1.7 on my mac - again 1.7.0_17.
