That definitely narrows it down.
'carmart-tx' should be OK.
'ejb-remote' should be OK.
'temperature-converter' and 'shopping-cart': Stateless and stateful session beans should be OK, but not sure they're good back-end examples. 
'xml-dom4j' and 'xml-jaxp': XML parsers, again, not sure they're what you are looking for.
'ejb-security' is a possibility, but it requires that you create an application user. Is that a problem?
'tasks-rs' requires a 'curl' command to test the POST command, but you can test the GET.

The rest of the transaction-based quickstarts (jts, jta, etc) require Postgres.
'ejb-security-plus' requires you run a script to configure the server.
