I fully agree with you, but the main problem for now is that the user needs to install the Groovy Eclipse plugin. Then, yes, there is no reason why you and [~mmalina] still get all these errors. The change in the parent pom.xml is something that should be sent as a PR to the javaee7-samples project, so that Eclipse users don't need to do it manually.
The use of Groovy is only required to run some tests with Spock, it's not necessary to deploy and run the projects on a Java EE7 server (AFAIK).
