I tried this and I can replicate this wrong validation. But once I added java 7 and selected that in the dialog directly (as Max said), the Classpath tab of Launch config will also have java 7. And the server will start with java 7.
I can't get java 6 in the launch config classpath at all, because the runtime dialog will not let me choose java 6 for wildfly.
