The issue appears to be an incompatibility with Java versions in the runtime settings. The Eclipse instance is running on Java 7, but the Execution Environment for the JBoss Runtime (Preferences/Runtime Environment) was set to JavaSE-1.8 instead of JavaSE-1.7. Apparently that was throwing things off in my Eclipse instance when it tried to kick off the server.
