Hi Luke,
I can confirm that expanding the console works fine after copying the ehcache files in web-inf/lib. Maybe this particular issue was solved as a side effect of fixing something else as the hibernate stuff went trough severe changes in the past year. But as Max suggests, it is better to not add these libraries to the project class path but rather to the hibernate console class path.
