Thank you for that note, Martin.  It help explains some of what I was experiencing.
I was unaware of the cached information (both in the workspace and in the Eclipse Keychain).  Knowing this, things are more clear.
I am concerned for other users that try to upgrade.  (Hopefully there won't be many going from 1.0 to 1.1.  For those that do, CEE now understands how to help them.)  
With luck, the new 'uninstaller' provided with 1.1 onward will make such problems nonexistent after this.  (Fingers crossed!)
