First up, apologies for the delay in replying.

I've fixed the beans.xml issue, thanks for reporting it. You can download the fixed version at https://github.com/jboss-jdf/jboss-as-quickstart/archive/master.zip - I tested this version, and it's working for me.

Your second issue, could you go into more details on where you see this?

The quickstarts are intended for newbies, and I'm sorry you had a bad experience with this one. Which other ones did you have issues with? I'm happy to help you with those as well.

I understand your frustration around Maven however we chose it as it is the "industry standard" way to build projects, for better or for worse.

Well, yet another quickstart that does NOT work.
First, there is an error in the beans.xml file with an extra closing comment. Easy enough.

Second, You get a "No connection specified for the project. No database-specific validation will be performed". Does this mean that JPA datasources or connection pools have not been set up? Does Maven not take care of this for you or shouldn't the project already have this hooked up for you?

If these quickstarts are not meant for newbies, then please by all means put a link to where we should be learning from. Java EE is completely confusing enough, without the hassles of maven since maven rarely works properly when building.
