How to test protocols/servers/clients?

Is there a tutorial on how best to write tests for netty applications?  If I
write a client/server, do I have to start up the server, have a client
connect to it over tcp/udp/etc.?  Is there an in-vm dummy tcp?  What's the
best way to test protocols (requests, responses, heart-beats, etc.)?
