Richard,
Dynamic columns (implemented as rich:columns tag)  should work for scrollableDataTable. 
There may be some problems with built-in sorting, but we hope to overcome them.

Mohamed,
Variations with ui:repeat will not work neither with scrollableDataTable nor with dataTable. At least in 3.2.0 version. You should use rich:columns instead
