When you create a new process with this version you should see the 
pre-created Email and Log workitems for you under the "Service Tasks" 
tab in the left-hand-side stencil set definition. These are just simple 
configurations, and you can create your own if you want. Check out the 
videos here: http://www.jboss.org/jbpm/components/designer for more 
info, specifically "jBPM5 tooling support for service nodes" for more 
info on configuring workitems through Guvnor and using them in the 
designer.
As far as registering a handler implementation for your email task, look 
at $jbpm-installer-dir/conf/META-INF/CustomWorkItemHandlers.conf to see 
how that is done via configuration (you can use the already existing 
org.jbpm.process.workitem.email.EmailWorkItemHandler implementation or 
create and register your own), and also read the docs ( 
http://docs.jboss.org/jbpm/v5.1/userguide/ch13.html) to see how to 
register your workitems in your Java app code.
