Hmm..  Itext only supports formatting controls for single-element cells.  A prior change made everything multi-element cells, even if there was only one element.  I've fixed this for text (paragraph).  Vertical alignment looks like it might be having an issue though.  I'll have to investigate more.

A workaround for current users is to set alignment on the paragraph element instead of the cell.  That's a bit rough if you were counting on using the default cell, but it does seem to work.
