[teiid-dev] Suggesting switching Examples from using Derby to Hsql

The only reason this wasn't done before is the general impression that JBoss devs wanted to excise HSQL as soon as possible. Given that it's staying around through AS 6, it seems fine to switch over. I'm assuming you would rely upon the hsql jar in the AS common/lib, correct?
Going back in time, the original intention of the example was to highlight typical steps, urls, etc. and possibly rely on a derby instance being installed already as part of the MM demo install. Derby of course can also be run in an embedded mode.
