It seems like there are several issues here.  

The first is that we're getting inaccurate estimates for the query plans in question.  Is the cardinality set wrong to begin with or is our estimation logic in error?

Next you can definitely set option nocache from the user level query.  If you can't set them in designer based upon its validation, then that validation should be removed.

On a related note setting the source cardinality to 0 currently means unknown, but I would hope in the future we fix that so that 0 is a valid value...
