[windup-dev] Test projects in windup/windup repository

actually start using them, we can re-think where they should go if

One possible home is: https://github.com/windup/windup-java-ee-tests - the
advantage of this is that it will be consistent with where other samples
are being maintained as they come in from contributors working on real
projects.
