[keycloak-dev] Documentation on metrics introduced in version 6.0.0

This is still in the backlog I'm afraid. Both docs and adding Keycloak
specific metrics.

If anyone is interested in contributing that'd be great. Otherwise it will
be a while until we can get it added.
