Perhaps we could add a org.hibernate.cache.RegionFactory#getDefaultAccessType() method to get the org.hibernate.cache.access.AccessType to use by default. We could add a property, but my concern is that we do not do any kind of "shifting" currently if a provider does not support a particular access type (ala, user requested "transactional", but we don't support that so lets "shift" that to "read-write").
