You just need to add it. SPI name is emailSender.

And couldn't found any reference how to setup the default
emailProvider.
Looking at the standalone.xml, on <subsystem
xmlns="urn:jboss:domain:keycloak-server:1.1"> section I can found
settings for spi:
- eventsStore
- realm
- user
- userCache
- UserSessionPersister
- AuthorizationPersister
- timer
- connectionsHttpClient
- connectionsJpa
- realmCache
- connectionsInfinispan
- jta-lookup
- publicStorage
But not for email provider.
