We're reverting the Hibernate Core upgrade since it breaks OSGI integration tests:

The main goal of this issue is to upgrade to the Hibernate Search 5.7.x family.
Hibernate ORM needs to be aligned as we use the combination in some tests; they don't
strictly need to be aligned for our functional purposes but it makes the upgrade much
simpler.
