When running the testsuite, how can I set e.g. EjbLogger.ROOT_LOGGER,
which is used in TimerTask and TimerServiceImpl, to DEBUG level?

Im not sure if there is any better way. I always set up 'org.jboss.as.ejb3' entry
(or any other entry I need) in logging subsystem conf prior test execution( in AS binary
). You can probably execute jboss-cli script to do this for jenkins run.

You could add a @ServerStartup task which just adds the logger and sets
it to a level of debug. You might need or want to set the
console-handler to debug as well. You can see an example here

There is a facility to set up trace logging when running the test suite.
If you do:
-Dtrace=org.jboss.as.category1,org.jboss.as.category2
They will be added to standalone.xml as part of the process of setting
up the server for the test.
