Then I found out the question marks were not being replaced. It would be nice if Order could also implement Criteria (or a re-factored out interface) so that I could contribute the replacement values via getTypedValues. As of now, my only workaround is to directly put the values into the ORDER by clause. This will reduce any prepared statement caching since the values are highly subjective.
