Interesting idea! If I get you right, you'd like to limit user choices to avoid
errors. On the other hand I'm not sure if this really makes sense. The can interact
with the openshift git repo with any kind of git tooling (egit, git command line etc.). So
you could for instance create a new branch, clone it locally using git command line and
then import that project to your workspace. The only thing the server adapter could do is
to query the OpenShift repo for remote branches and offer them in the combo.

When you open the detail of OpenShift server adapter you can change the Git remote name
by typing the new value. Could you change the text field to combo box filled with remote
names that are actually configured for the OpenShift project?
