What the server and runtime selection in New Seam Wizard do they have the same issue ?
If yes - then this sounds like a feature of the GTK theme you have enabled.

As exemple.
Right Click on Web Project View > Create new JSF project.
Point cursor to "JSF Enviroment" or "Template" filed. Font color
changes to white. Nothing can be seen.

All fields with same functionality got this problem.
