I'm attaching a process monitor logfile in case anyone wants to look into it (and also so I don't lose the log). Process Monitor is a microsoft product and keeps track of all reads / writes / other access to some file or folder, as well as what pid's are requesting the behavior.
If you open this log file in ProcMon.exe, you can see that there's a Buffer Overflow listed at 6:25:46 PM and I suspect that causes the server to throw up and forget what it's doing, forget to unlock files, etc.
