This works for me. Shorter and the user doesn't necessarily need to know about the
"Freemarker" bit...
Now, my question is... In this context, "Template" may be misleading. Could we
change it to "Mapping"?

I think the "Apply FreeMarker Template" should just be called "Apply
Template". The fact that it's a FreeMarker template is an implementation detail.
When we have support for XSLT, perhaps we can have a radio button to allow selection of
the templating tech to use.
