Ok... Couple of things.
First, I've updated all of the project example zips to remove the "SOA 5.0"
or "5.3" or whatever line. Instead, I changed it to "To run this example,
you should create EAP 5.x server runtime in your workspace."
Second, I'm curious about your test environment. Using JBDS 4.1.1 M1, a SOA-P 5.1
runtime defined in my Servers view, it works fine.
These examples are not defined to work with AS + JBoss ESB environments. They've
always required EAP or SOA-P so far as I know. Thus the requirement of "Example
requires a SOA-P 5.x runtime." in the example description and "To run this
example, you should create EAP 5.x server runtime in your workspace." in the
readme.txt files.
So I think the issue of running this on AS + ESB is not an issue. And if we want that to
work, we need to work on it for JBDS 5, not 4.1.x.
ESB 5.0 quickstarts readme files instruct the user to only use a
specific runtime name - but that requirement is no longer needed

The readme files all say:
To run this example, you should create EAP server runtime
