I think you are experiencing the wonderful decisions in the world of Gnome Desktop.
Try check your other applications and see if they are missing icons too.
The icons are there on all other OS's and the reason you see them in JBDS 6
screenshots is probably because at the time you didn't ran a newer linux distro where
there are "features" like this:

where in someone notes:
"That's a new "feature" of GNOME 2.28. Please open
gnome-appearance-properties, select the Interface tab and enable "Show icons in
menus"."

Using 8.0.0.Beta1 today I noticed that there are no content menu icons. All menus
(including File>New, OpenShift Explorer context, Servers Context) have just lists of
menu options with no associated icons. For example, I don't see any of the icons in
the screen caps in JBIDE-15801. Very plain and dull :(
Looking back over the docs, I notice that the same issue was present in JBDS 7.x. But
menu icons were present in JBDS 6.0.0.
