I tried roughly the same thing as in the steps above and I can see the same result. When
you select a link in the file picker on macOS in Eclipse, the server adapter now points
directly to the linked minishift binary, not using the symlink.
Again, I think that's because of the way Finder / File picker works on macOS.
Now I tried to enter the symlink in the server editor manually and it seems to be starting
alright, so that might be a workaround for you.
CDK Server adapter editor: using symlink for "Minishift
Location" stores the referenced binary, not the symlink
