works as designed. subtable encodes table structure without table declaration and its
headers and footers moved to main table corresonding elements. Just build your header
carefully yourself using main table header as it shown at demo.

As soon as a dataTable contains both subTable and a column "header" facet an
additional <th> element is rendered.
Example:
