Am I right in assuming each host can have it's own version of domain.xml where
profiles are configured?

The "Server" and the "Runtime" tabs on the admin console lets me pick
which host I want to manage.
But if I were to edit profiles or configure subsystems for a remote slave host, the admin
console does not provide an option to manage a slave host.
By default only the profiles associated with the host running the domain controller is
accessible.
