Once you are logged into the portal you can click the Edit Profile tab in the User Portlet and choose a different theme. If you are logged in as admin, you can go to the management portlet (Home page on the Admin portal) and change the default theme for any of the portals. If you are starting with a fresh portal installation (never run it yet), you can change the value of the theme.id property in the jboss-portal.sar/conf/data/default-object.xml file.
