Paolo,

Yes installer will only be updated for the GA/SP releases of the app server.

You have a couple of options:

1. Install EJB3 manually on top of 4.0.5.CR1
2. Build latest 4.0.5.CR1-compatible installer

  | svn co https://anonsvn.jboss.org/repos/installer/jems-installer/trunk
  | ant
  | 

I suggest 2nd option. It only takes a few minutes.
