The last log seem to indicate some bug in p2 updatesite - it shouldn't throw an exception like this. About dropin then it should work and surprised it doesn't - report it in jira please. And finally missing the birt dependency should *not* result in code completion not working - sounds like something big was missing from your eclipse install, i.e. WTP xml editors ?
