I don't know of a book for all three. But you might consider these:
JBoss at Work by Marrs and Davis (
http://www.jbossatwork.com/). It takes you from scratch
building a web application using JBoss and Hibernate. Very good JBoss "working with
JBoss" intro.
Expert One-on-One J2EE Development without EJB by Johnson and Hoeller. Gives a lot of the
background on what is Spring, and includes some info on Hibernate.

Profession Java Development with Spring Framework by Johnson et al.

Unfortunately, both Spring books are over a year old and do not cover the new features in
Spring 2.x that make use of Java annotations.
