I haven't seen the header "Server", but in the past I've changed the default "X-Powered-By" header by altering the value in the initialization parameter for the ReplyHeaderFilter in the global web.xml. Check the filter definitions declared in the Tomcat SAR in your deploy directory (usually $JBOSS_HOME/server/[instancename]/deploy/jbossweb-tomcat55.sar/conf/web.xml). Good luck.
