Start with Eclipse Europa J2EE version and add JBoss Tools 2, it has wizards for a simple project you can then start fiddling around with. Seam is an evolution along a long line of web development frameworks and ideas. If you are new to this stuff it can probably feel like trying to drink from a fire hose but that doesn't mean that the product itself "doesn't work".
