Do you mean you want to disable auto-build or auto-deploy ? Disabling auto-build is done in the Project menu but I really really encourage you to keep that enabled since otherwise nothing in eclipse will be told about changes incrementally and you loose a lot of the power of the IDE. Auto-deploy (or auto publish) you can set in the preferences or on the individual servers; just double click the server and adjust the settings in the publish section.
