attached is a patched lib of jbpm 3.1.4.
with this you should be able to set a function mapper just like you set the variable
resolver. 2 ways of configuring the function mapper are supported:
1) by means of the static method JbpmExpressionResolver.setFunctionMapper
2) with the configuration property jbpm.function.mapper in the jbpm.cfg.xml
if i recall correctly, seam uses the first approach.
Can you let me know if this is what you want and wether it works in your scenario ?

Currently, jBPM uses its own forked EL (which is a problem to begin with....). This means
that it can't see the s: functions.
We need to fix this problem ASAP.
