If you have a unknow number of columns, theres no way to create a excel using jboss-excel.
A solution is create a tag e:columns like a existent rich:columns.
Here's an example of what I'd like to do:

<e:worksheet name="cars">
<e:columns value="#{dataTableScrollerBean.columns}"
var="columns"
index="ind">
<f:facet name="header">
<e:cell value="#{columns.header}"/>
</f:facet>
<e:cell value="#{model[ind].model}"/>

</e:worksheet>
<e:workbook>
