So far I haven't written any Java code to get my initial rules running in
Guvnor. My client apps are going to be non-Java apps that send HTTP Post to
the execution server. I am not sure how I could use the audit framework in
the web-based Guvnor UI. I looked at WorkingMemoryLogger but I can't figure
out how to use it on the server. Can you point me to some documentation or
links?

Take a look at the audit functionality, you can extended that be
something more custom if you need. You can also look at the debug
listeners, the audit framework is based on the listener framework.
