Never mind. (I hate it when you post a question and then immediately find
the answer!)
For anybody else the correct dependency format is:
<dependency>
<groupId>org.drools</groupId>
<artifactId>drools-core</artifactId>
<version>5.0.0.SNAPSHOT</version>
</dependency>
NOT
<dependency>
<groupId>org.drools</groupId>
<artifactId>drools-core</artifactId>
<version>5.0.0-SNAPSHOT</version>
</dependency>
