As far as registering a handler implementation for your email task, look at $jbpm-installer-dir/conf/META-INF/CustomWorkItemHandlers.conf to see how that is done via configuration (you can use the already existing org.jbpm.process.workitem.email.EmailWorkItemHandler implementation or create and register your own), and also read the docs ( http://docs.jboss.org/jbpm/v5.1/userguide/ch13.html) to see how to register your workitems in your Java app code.
