Uncomment this entry in the jboss-log4j.xml file:

   <!-- Enable JBossWS message tracing
  |    <category name="org.jboss.ws.core.MessageTrace">
  |     <priority value="TRACE"/>
  |    </category>
  |    -->
  | 

The SOAP messages will then show up in server.log.
